I decided to make a quiche for my wife and her caregiver. Her caregiver, Georgia, is very busy putting up fruit right now. Our fruit trees have been loaded and we had peaches, apricots and plums coming on at the same time. She is like a one-armed paper hanger.
Here is what I put in my quiche because I didn’t want to go to the store:
½ cup of milk
1/4 cup of mayonaise
1/4 cup of sour cream
1 tsp of corn starch
1 can of quality chunk crab meat, drained
1 ½ cups of shreaded Mozzarella
½ cup cheddar cheese sprinkled on top.
1 bunch of green onion
Old Bay seasoning
small amount of salt
I placed a store bought pie crust in the bottom of a cast iron skillet and baked it for about 50 minutes at 350 degrees Fahrenheit. The cast iron skillet guarantees uniform cooking.
My wife’s caregiver and I don’t like quiche very much. WE LOVED THIS ONE as did my adopted grandson from Haiti. who dropped in for lunch.
